Sprinkle 2 tablespoons of salt over the slices and let them sit for 20–30 minutes to reduce bitterness.
Rinse the karela slices under running water and squeeze out excess moisture.
Heat oil in a pan and add cumin seeds. Let them sizzle for a few seconds.
Add the sliced onions and sauté until they turn golden brown.
Stir in the ginger-garlic paste and cook for a minute until fragrant.
Add the bitter gourd slices and cook on medium heat, stirring occasionally.
Sprinkle red chili powder, turmeric powder, coriander powder, and salt to taste. Mix well.
Cover and cook for 10–15 minutes until the karela softens.
If using tomatoes, add them now and cook until they blend into the dish.
Sprinkle garam masala and mix well.
