1 teaspoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1 teaspoon garam masala
Salt to taste
2 tablespoons oil
Fresh coriander leaves for garnish
Lemon wedges (optional)
Drain the soaked Kalay Chanay and rinse with fresh water.
In a pressure cooker or pot, add Kalay Chanay with enough water and a pinch of salt.
Cook until they become soft but not mushy (about 20-25 minutes in a pressure cooker).
Heat oil in a pan and add cumin seeds.
Once they start spluttering, add chopped onions and sauté until golden brown.
Add ginger-garlic paste and cook until the raw smell disappears.
Add chopped tomatoes and green chilies, cooking until the tomatoes turn soft.
Mix in turmeric powder, coriander powder, red chili powder, and salt. Cook until oil separates from the masala.
Add the boiled Kalay Chanay to the masala mixture and mix well.
Cook for 5-7 minutes, allowing the flavors to blend.
Sprinkle garam masala and stir well.
Garnish with fresh coriander leaves and serve hot with lemon wedges.
